Three Ingredient Peanut Butter Cookies

Oh, Valentines Day. You either love it, or you hate it. I have always been a fan, even when I was a single twenty-something year old. For a few years before my husband came along, my Valentine was my little nephew, and our date night consisted of going to the movies and McDonalds Happy Meals.  I treasure those memories, and I look forward to making more once we are blessed with our own children. For some reason I relate Valentines Day more towards kids than adults, even if it is suppose to be the most romantic day of the year.  Maybe because I always enjoyed making Valentine boxes for school, and all the heart shaped crafts and treats. It’s just a lovely day all around, in my opinion.

With the holiday of love coming up in less than a month, I wanted to share one of my favorite cookie recipes, that also happens to be the most easy and quick recipe, ever. So if you find yourself looking for a super fast Valentines Day treat to send to school with your little one, or a last minute sweet for your special Valentine, look no further! And no need to run to the store, chances are you already have the three, yes three, ingredients needed to make these delicious three ingredient peanut butter cookies.

INGREDIENTS:

  • 1 Cup Creamy Peanut Butter
  • 1 Cup Sugar
  • 1 Egg

DIRECTIONS:

  • Preheat oven to 350 degrees
  • Line a cookie sheet with parchment paper
  • Mix Peanut Butter, Egg, and Sugar together until smooth
  • Roll spoonfuls of the cookie dough in balls, and place on cookie sheet
  • Press down tops of dough balls with a fork until desired size

{Optional for Valentines Day}

  • Use heart cookie cutter to shape pressed down cookies
  • Sprinkle desired Valentines Day sprinkles on top of cookies
  • Bake in oven for 8-10 minutes
  • Sprinkle sugar on top of baked cookies for extra sweetness

Again, so super easy and quick! You can’t go wrong with these. Enjoy!!!
