Banana Nut Muffins with Cream Cheese Frosting

Banana nut muffins with cream cheese frosting, um yes please! These muffins are absolutely delicious and will satisfy your desire for something filling and sweet at any point of the day.
My mother in law made these while we were out for a weeklong visit with them in the country, and I had to share the recipe with you all because they were just so yummy!
The homemade cream cheese frosting was such a perfect touch to give them some extra sweetness, but you can leave some without for a quick on-the-go breakfast grab.
Banana Nut Muffin Ingredients
- Flour
- Salt
- Baking powder
- Baking soda
- Sugar
- Shortening
- Buttermilk
- Ripe bananas
- Eggs
- Nuts (I used Pecans)
Cream Cheese Frosting Ingredients
- Cream cheese
- Milk
- Vanilla
- Salt
- Powdered sugar
How to Make Banana Nut Muffins with Cream Cheese Frosting
1. Preheat oven to 350 degrees, line 12 cup muffin tin with baking cups and set aside.
2. For muffins: In a large bowl, sift together flour, salt, baking powder, baking soda, and sugar.
3. Add in shortening, 1/3 cup buttermilk, and mashed bananas and beat with mixer for 2 minutes on medium speed.
4. Add in another 1/3 cup buttermilk and unbeaten eggs, beat with mixer 2 more minutes on medium speed.
5. Fold in nuts (I used pecans for this recipe).
6. Spoon in about 2/3 mixture into each baking cup, and bake for 17-20 minutes, or until toothpick comes out clean from center of muffin.
7. Remove muffins from pan and place on cooling rack.
8. For cream cheese frosting: In medium bowl, mix cream cheese, milk, vanilla, salt, and powdered sugar. Whip until consistancy of frosting.
9. Once muffins are cooled, top with frosting and chopped nuts (optional).
These muffins were such a hit, and I will definitely be making them again! They would be so great to bring for a brunch get together or even make for a little neighborly treat.

These banana nut muffins are great with or with the cream cheese frosting. Use your favorite kind of nuts, and make them your own!
